Cutting hair dry, curl by curl enables me to create a bespoke shape for your curls in a way that cutting wet, with a comb and tension doesn’t.
Each head of curls will have different curl patterns and spring factors all over the head.
As soon as the hair is wet - I can no longer see the true spring factor or pattern for each curl family making it impossible to create a balanced shape. 
Cutting dry i can see the shape being created as can you!
It also helps to keep each curl family in tact by keeping a blunt finish at the end of each curl family.
To elaborate, imagine a piece of rope. If the end of the rope is cut on an angle, it will unravel / fray over time where as if it is cut straight across the bottom it will stay in tact. This is much like your curls. How can i cut straight across the bottom if the curl is separated and combed straight? Such a small detail makes a huge difference to the quality of your curls and being able to create a defined look.
The same goes for slicing and “ thinning hair” which is something i will never do to your curls!
